Freshen Up Your Eating With Nopales This August!

Nopales are in season right now. If you are thinking what in the heck is that – you are not alone! These August vegetables are the modified stems of a cactus plant, and these tender veggies have been getting more and more press around the world because they are rich in dietary fiber, boost our immune systems, are vitamin-rich, and contain antioxidants.

If you want to work nopales into your diet this August, cactus salad recipes are a great place to start. Enjoy this delicious and healthy southwestern cactus salad. To make it, you’ll need:

  • 1 16-ounce can of nopales or you can find fresh ones at specialty markets
  • 5 jalapeno peppers
  • 2 cups of tomatoes, chopped
  • ½ cup of onion, diced
  • ½ cup of fresh cilantro leaves
  • 2 lemons
  • ½ teaspoon of garlic salt

Drain and rinse your nopales, if using fresh ones, simply steam them until they are tender but not over cooked, and let them dry. Meanwhile, seed your jalapeños and mince them.

In a mixing bowl, stir together the nopales, jalapeno, tomatoes, onion, and cilantro. Squeeze the juice from both lemons over the mixture, cover, and refrigerate for at least one hour. Sprinkle with garlic salt and enjoy!
