Pesto Pasta Caprese Salad Recipe For Your Picnic

The long days and summer sun of July make it the perfect month to enjoy your meals al fresco. It makes sense, then, that July is National Picnic Month. So we can have the perfect recipe to zest up your picnics, we want to offer you this one for pesto pasta caprese salad. To make it, you will need:

  • 1 ½ cups rotini pasta
  • 3 tablespoons of pesto
  • 1 tablespoon of olive oil
  • ¼ teaspoon of salt
  • ¼ teaspoon of granulated garlic
  • 1/8 teaspoon of black pepper
  • ½ cup of grape tomatoes, halved
  • ½ cup of small mozzarella balls
  • 2 basil leaves, shredded

Lightly salt a large pot of water; bring it to a boil. Cook the rotini al dente (about 8 minutes).

In a large serving bowl, stir together pesto, olive oil, salt, garlic, and pepper. Add in the rotini and toss to coat. Gently stir in the tomatoes, mozzarella, and basil.

Cover and refrigerate until your picnic. Then, enjoy!
